Mama’s Marble Cake

I have to say that THIS is one of my favourite sweets…the classic marble cake.

Ingredients

125 gms butter
3  1/4 cup caster sugar
1  1/2 cup self raising flour
2 eggs
1/2 cup of milk (or alternatively use evaporated milk for a creamier flavour)
1  1/2 tsp of vanilla essence
2 tbs cocoa powder

Directions

1. Cream the butter & sugar till it’s white and fluffy.
2. Add the vanilla essence and carry on whisking for another 2 mins or so.
3. Add the eggs and fold into the mixture.
4. Add half of the flour and half of the milk – keep folding.
5. Add the rest of the flour and milk into the mixture. Keep checking the consistency.
6. Separate 1/4 of the mixture into another bowl and add cocoa powder with a touch of milk, and fold.
7. Grease a deep baking tin with a little butter and start layering the 2 mixtures. Cream then chocolate and so on.
8. Bake in the oven at a 150 degrees for around 40 mins – check that it’s baked all the way through before removing from the oven.

Serve with a nice cup of tea…mmm!!!

Sticky Chicken

I don’t really have exact measurements for this yummy, messy, sticky dish.  When it comes to most Asian cooking,  if I were to ask my grandma or my mum for the exact measurement of ingredients in a dish, they will always say, “agak-agak” 🙂 – this means “just estimate” in Malay.

Anyway, here’s what you’ll need…

whole chicken cut in quarters (or just use chicken wings)
honey
dark soya sauce
a dash of sesame seed oil
lots of grated ginger
diced garlic
ground white pepper
fresh chilli paste (optional)
coarse ground black pepper

What to do next…

1. Soak the chicken in a bath of all the ingredients above – make sure you taste it before hand so you have the right balance of taste…sweet & salty…again, use the “agak-agak” theory :). Marinade for about 2 hours or preferably overnight (the longer…the better!)

2. Arrange on a baking tray & roast at 180 degree heat for 25 to 30 mins with all the marinade juices.

3. Remove from oven, let it rest for 10 mins, spoon the caramalised marinade onto the sizzling chicken and serve on a bed of rice with a side of stir fried vegetables.
