I found this recipe online a few years ago and it is simply one of my favourites!  I did reduce the sugar measurement from 175gms to just 100gms as I found it was too sweet for me.

225 gms  self raising flour
1/4 teaspoon bicarbonate of soda
a pinch of salt
75 gms butter
100 gms Caster sugar
2 medium eggs, beaten
450 gms bananas weighed with skin (peeled and mashed)
100 gms walnuts, chopped


1.  Heat the oven to 180 degrees C.  Grease and line the base of a 1kg loaf tin.
2.  Mix together flour, bi-carb and salt.
3.  Cream the butter and sugar until pale and fluffy, add the eggs a little at a time alternately with the flour.
4.  Stir in the remaining flour, bananas and walnuts and place in a prepared tin.  Bake for about 1 and a quarter hours.
5.  Cool on a wire rack.

…and for those cheeky days, serve with a scoop of vanilla ice cream and chocolate sauce!! Enjoy!!
