I love reading posts from fellow bloggers and they do inspire me to try out their yummy looking recipes. For example yesterday, I saw Elaine’s post of Oven Baked Falafels and thought oh my how tempting!

Seeing as we can’t get Falafels here, what could be a nicer surprise for my husband as he loves them! I had the intention of following Elaine’s recipe but I got so caught up in making them, I did not follow the measurements…so I just had to wing it and just cooked with great abandon!

So here is my take on the Falafels…

β€’ Chickpeas
β€’ Fresh parsley
β€’ Fresh cilantro
β€’ Garlic
β€’ Onion
β€’ Cumin powder
β€’ Olive oil
β€’ Lemon juice
β€’ Salt & pepper for seasoning

1. Place all ingredients in a food processor and blitz away. I did’t blitz it too much as I wanted some texture to the falafels.
2. Pre heat oven to 180 degrees C and line a baking try with greaseproof paper.
3. Roll the batter into balls, or into a messy dollop like mine and bake in the oven till brown.


I made a yoghurt sauce to accompany the Falafels by using Greek yoghurt and to it I added fresh chopped cilantro, lemon juice, salt & pepper to taste…


Serve with some warm pitta bread and a side salad…


Crunchy on the outside and soft on the inside!

Not as round and perfect like most Falafels, but they were perfect for our dinner! 😊


Thank you Elaine for the recipe…even though I completely forgot to follow them as it can get quite chaotic whenever I do try to follow a recipe!
