Quick Healthy Meals

Since I started running again, I’ve been preparing super easy and healthy meals for my lunch. I try to run between 7km to 8km every other day and the last thing I want is to prepare fussy lunches as I’m usually pretty hungry by the time I get home.

So here are just a few photos of what I’ve been having after my runs. No recipe or method needed…just photos.

Running is…

1. The best way to shed negative energy.
2. The best way to repel boredom.
3. The best way to feel fantastic about yourself.
…and the best thing…running makes you sweat sparkle!✨

Asian Inspired Sea Bream

I have to admit, I rarely use fish in my cooking but whenever we’re out for a meal, I almost always order fish. Strange, I know. I love fish, especially smoked salmond on a bed of salad which I often have for lunch or perhaps addicted to!

While at the market a couple of days ago, I saw some beautiful fresh “Dorada”, no idea what it was in English at the time so I had to google it when I got home! Turns out it’s Sea Bream or Gilt-head Sea Bream. I wanted something with not to many bones and lots of meat so the Dorada was perfect for a simple Asian inspired dinner…

Ingredients
• Fresh Sea Bream (cleaned)
• Garlic (sliced)
• Ginger (sliced)
• Spring onions (roughly cut)
• Sesame oil
• Light Soy sauce
• cracked black pepper

Method
1. Pre heat oven to 200 degrees C.
2. Place sliced ginger & garlic in and on top of the fish. Add the sesame oil, spring onions and cracked black pepper.
3. Wrap with silver foil leaving an opening at the top and place in the oven for 15 to 20 mins depending on the size of your fish.

Once the fish is ready, add a few drops of light soy sauce onto it…serve with a side of boiled rice and some steamed or stir fried vegetables of your choice.

Healthy, tasty and best of all…no mess!😊

A Warm Autumn Salad🍂

It’s still fairly warm here with temperatures up to 27 degrees C yesterday. I used to live in Edinburgh and usually by this time of year I would have to crank up the heating. Not here though. Not yet anyway.

Even with the balmy weather, I really fancied a warm “autumny” salad full of gorgeous bright colours and flavours. So for dinner last night, I entertained my craving and prepared this…

Ingredients
• Chicken breast fillets (marinade overnight with garlic granules, paprika, oregano, salt, cracked black pepper & a little olive oil)
• Mixed salad leaves
• Mini Kumato tomatoes (they have a sweeter flavour and that stunning dark colour)
• 1 sweet potato (diced & roasted in olive oil, seasoning and honey)
• Sunflower seeds
• Pomegranate seeds
• Juice of half a lemon, honey & olive oil to dress the salad

Method
1. Pre heat oven to 150 degrees C and roast the diced sweet potato till cooked. Mine took less than 20 mins to cook so do keep an eye on them.
2. Pan grill the chicken breast fillets till golden and set aside but make sure it stays warm.
3. Assemble your salad ~ place your mixed salad in a big bowl, throw in the tomatoes, add the warm sweet potatoes, the dressing, pomegranate seeds, sunflower seeds, seasoning and mix well.
4. Plate the salad and top it with the pan grilled chicken fillet.

Classic Marble Cake

A couple of weeks ago, I made an all time favourite…the classic Marble Cake. This recipe was passed down from my grandma to my mum and been in the family for years.

Ingredients
• 125gms butter
• Half cup caster sugar (add more if you like your cakes sweet)
• 1 and a half cup self raising flour
• 2 eggs
• Half cup of milk (or alternatively use evaporated milk like I did for that creamier flavour)
• 1 and a half tsp of vanilla essence
• 2 tbs cocoa powder

Method
1. Cream the butter & sugar till white and fluffy.
2. Add the vanilla essence and carry on whisking for another 2 mins or so.
3. Add the eggs and fold into the mixture.
4. Add half of the flour and half of the milk ~ keep folding.
5. Add the rest of the flour and milk into the mixture. Keep checking the consistency.
6. Separate 1/4 of the mixture into another bowl and add cocoa powder with a little milk and fold.
7. Grease a baking tin with a little butter and start layering the 2 batters, alternating the vanilla, then the chocolate. (To create marbling, run a table knife through the batters in a swirling motion.)

8. Bake in the oven at a 150 degrees C for around 40 mins ~ check that it’s baked all the way through before removing from the oven. Cool on a wire rack.
