The craving for comfort food has hit me hard. I’m struggling to adjust to the cold this time and even made a hot water bottle to warm my toes yesterday! I can’t believe this, I used to live in Scotland. Don’t get me wrong, I loved it there and Scotland will always, always have a very special place in my heart as it was where I spent most of my early 20’s right up to my early 30’s, it was where I met my husband and it was also where we got married. But oh my goodness how did I survive the winters for almost 13 years? I don’t think I craved comfort food all the time there.
Anyway, yet again to entertain my cravings, I made a very simple Crispy Chicken dish…
Ingredients
• Chicken thighs or drumsticks
• Milk
• Flour
• Dried parsley
• Paprika
• Oregano
• Cracked black peppercorns
• Salt to tast
Method
1. Soak the chicken thighs in milk between 20 to 30 mins.
2. Combine flour, garlic granules, paprika, dried parsley, oregano, cracked black peppercorns & salt in a large bowl.
3. Pre heat oven to 180 degrees C.
4. Heat a little oil in a pan.
5. Coat the chicken thighs thoroughly in the seasoned flour mixture and sear both sides in the hot pan before transferring them onto a baking tray and into the oven.
6. Remove the chicken thighs from the oven and let them rest for a few mins.
I served it with garlic & parsley mashed potatoes along with a very simple salad. Craving satisfied!😊

Yum! A great comfort food I love is baked cheez-it crusted chicken…it’s a healthy version of fried chicken. I will have to try out your crispy chicken!

I do so like oven-baked chicken. As a Southerner I am very familiar with fried chicken, but these days I prefer mine baked and crispy like yours. Great recipe…looks so yummy.

Oh my, I understand you… after living in Canada and surviving its winter, I swear I dont know how I made it out alive hahaha the winter in Germany is normal compared to the Canadian one.
My favorite comfort food is spaghetti bolognese, can you believe it? But there is one detail to that… it should be made by my hubby hahahaha 😀
I know right? I have been so cold here! I suppose in Scotland the summers don’t get as hot as it does here, so when there is a temperature drop, you do feel it. It was the same when I used to live in Perth, Western Australia. I used to think 20 degrees was cold haha! Mmm I do enjoy a good bolognese too! 🍝
hahahaha yesss… and me being a Brazilian, especially from the North region where 24 degrees is the lowest temp. Canada with its -51 degrees in winter really made me crazy hahaha!! But I guess the winter in Spain is much better than here in Germany isnt it? You are lucky to have more sun than we do 😦 here is all dark and foggy!
Yes and me from tropical Singapore where it’s hot & humid all year round! Lol! Well Bilbao weather is not like the South of Spain, it can get quite rainy and cold in the winter but definitely not as cold as Germany I suppose. Yesterday we had 21 degrees so it’s not too bad and today seems brighter with a top of 19 degrees.
