Nutella French Toast Roll Ups

Hi all! Hope you’ve had a great weekend! Ours was spent doing food shopping, having bubble tea (yum!) and me figuring out how to use a washing machine with instructions in Chinese! Finally we sent a message to  the translator so that he could help as I had no idea! 

Anyway, while browsing posts from fellow bloggers, Jhuls from The Not So Creative Cook had made these super adorable Nutella French Toast Roll Ups. I have made Nutella Filled French Toasts a few times but never thought of rolling them up! So later that day, I went to the imported goods grocery store, got some Nutella and made these cuties for Saturday breakfast.  Ingredients

• Nutella
• 2 eggs
• 50ml milk or single cream
• 3 slices of bread without crusts
• 1 tsp vanilla essence

Method

1. In a shallow bowl, whisk the eggs, milk and vanilla essence.
2. Flatten the bread with a rolling pin, spread the Nutella on (as much as you want!) and roll it up. Trim the edges with a sharp knive to make it look neater. 
3. Soak the bread in the egg mixture. Place in a hot pan with a touch of butter and cook seam side down for a minute or less on each side.

Dust with powdered sugar and serve hot with any fruits of your choice!💙

*With the access egg mixture that was left, I made some bite sized normal French Toasts.

Goodbye London, hello jet lag

I arrived in China late yesterday afternoon where I was met by my husband after an 11 hour flight from Heathrow. I have to say, I was not too tired as I managed to get around 7 hours of sleep…on and off. It’s a different story today though as my head is buzzing and my eyes are closing but I MUST not give in as it’s only 1.05pm!! (Must stay awake… must stay awake)😴

I will post more stories on China once I get some photos taken but this was the view I woke up to this morning. (Dongguan at 6.35am)

Now, back to London. I had the chance to meet with Selma for brunch the day before I left and that lady is as beautiful as her blog, if not more! She took me to Brew in Wimbledon Village and had theee most delicious eggs!    Mine was perfectly poached eggs on hung yoghurt with chilli butter!   …just look at that yolk!

Selma and I talked and laughed over brunch and being around her just made me feel so positive about so many things! Amazing woman! Also confessed that she’s one of my blog idols! Haha! 

I also managed to catch up with my baby sister while I was there and spent a lovely time staying with my cousin. 

Off to Hong Kong tomorrow for the weekend, so I will be taking more photos there too!

Oven Poached Eggs

I am completely hopeless at making poached eggs. I have tried over and over again but fail each and every time. Ok, maybe eggs just don’t agree with me…I am even completely hopeless at frying a sunny side up egg! I get my husband to do it!

So imagine my excitement when a good friend of mine shared a post on her facebook page on Oven Poached Eggs! I HAD to give it a go.

First result…

Method
1. Pre heat oven to 180 degrees celcius.
2. Add 1 tbsp of water into each cup of the muffin pan.
3. Break the eggs into each of the cups.
4. Bake for 10 mins, scoop out with a spoon and there you have it!

It was so simple, there was no stopping me! I am addicted!

Quick Healthy Meals

Since I started running again, I’ve been preparing super easy and healthy meals for my lunch. I try to run between 7km to 8km every other day and the last thing I want is to prepare fussy lunches as I’m usually pretty hungry by the time I get home.

So here are just a few photos of what I’ve been having after my runs. No recipe or method needed…just photos.

Running is…

1. The best way to shed negative energy.
2. The best way to repel boredom.
3. The best way to feel fantastic about yourself.

Savoury Bread Pudding

It’s all about the summer “ferias” ~ fairs and “fiestas” ~ parties here at the moment and Bilbao is full of street parties, outdoor concerts, parades and fireworks every night for 10 days during this “Semana Grande” ~ the big week.

It was also a public holiday last Friday and I decided that I wanted to prepare a cooked breakfast for us as I’m usually a slice of toast kind of person when I’m on my own and that morning my husband suggested we have French Toast. I wasn’t too keen on the idea and wanted something slightly different but with bread and eggs included, so I decided to whip up this easy Savoury Bread Pudding with the day old bread we had…

Ingredients
• Eggs (beaten)
• any kind of bread you may have (roughly chopped)
• Mixed dried herbs
• Spinach
• Cherry tomatoes (halved)
• a little milk/evaporated milk
• salt & cracked black pepper to taste
• Cheese (optional)
• Extra virgin olive oil

Method
1. Pre heat oven to 150 degrees celcius.
2. Place the chopped bread in an ovenproof dish and set aside.
3. In a bowl, beat the eggs and into that, add the milk, herbs, salt & pepper and spinach. Combine well and pour over the bread making sure it is completely coated.
4. Add grated cheese and place the halved cherry tomatoes onto it. Drizzle with a little olive oil and bake in the oven till golden and risen.

Once ready, leave to cool for 5 mins and serve warm…

A warm hearty breakfast packed with flavours and kept us so full that we had a really late lunch!

Next time I’ll try it out with more veg like mushrooms and other herbs! Countless ways to make this! Enjoy!

Birthday Breakfast

It’s my husband’s birthday today and I had planned on making him my Nutella Filled French Toast for breakfast this morning but there were no strawberries available at my favourite fruit and veg store yesterday. So I made him a savoury Herbed French Toast topped with caramalised red onions instead.

Ingredients
• Eggs
• Bread
• Dried parsley
• Garlic granules
• Red onions (cut into rings)
• Salt & cracked black pepper to taste
• Olive oil & a little butter

Method
1. In a skillet, heat a little olive oil. Sauté the onion rings for about 3 mins and set aside.
2. Beat eggs, a drop of milk, dried parsley, garlic granules, salt & pepper in a bowl.
3. Cut the bread in the size you want, dip into the egg mixture and place in the hot skillet with a little olive oil.
4. Once it’s golden, place on kitchen paper.
5. Top the stacked French Toasts with the caramalised onions.

No Ordinary Eggs

Sundays are the best days for a nice leisurely breakfast. Wouldn’t you agree? I love scrambled eggs but when I do make them, I always make sure they are not dull and well…ordinary! I like adding herbs and cheese to mine!

Ingredients
🍳 Eggs
🍳 Milk
🍳 Cheddar cheese or any other you may fancy
🍳 Cherry tomatoes
🍳 Mixed dried herbs
🍳 Parsley & garlic mix (optional)
🍳 A little salt & cracked black pepper
🍳 Butter and a little olive oil

Method
1. In a skillet, add butter and a little olive oil to stop the butter from burning.
2. Halve the cherry tomatoes and sauté till slighty soft.

3. Beat eggs and add milk, cheese along with the herbs into a bowl.

4. Pour into the skillet and cook till slightly done or once the cheese melts.

Serve with warm slices of toast…

Ps. Place your toasts upright against each other as putting them flat on your plate can make them soggy from the condensation. 😊

Broken Omelette

I must admit and I am not proud of it but when I am on my own, I tend to get lazy when it comes to cooking for myself and it’s usually during lunch when I find myself snacking on fruits, nuts and even tofu (basically anything convenient I can find). For example yesterday, by 2pm I started “hunting” for food and ended up having a banana, a yellow plum and leftover brown rice!

So when my husband came home from work with a sore stomach last night, I knew he would not be having any dinner. After much deliberation, I ended up making myself a lazy dinner of tuna, roasted peppers & mushroom omelette….well…a broken one!

What you will need…
– 2 eggs
– roasted Italian sweet peppers (I made this yesterday by placing peppers, a whole garlic, mixed herbs & olive oil and roasting till the peppers are soft)
– tuna
– oyster mushrooms

Method
1. In a hot skillet, add the tuna, mushrooms and a little of the oil from the roasted peppers. Sauté till the mushrooms are cooked.
2. Add as much of the home-made roasted peppers as you like, season with cracked black pepper, stir them around and add the beaten eggs.
3. Spread the eggs out evenly and let it cook before flipping over. Mine broke during the flipping process!

Serve this with a side salad.

Before I made this, I said to my husband that I was just going to fry a couple of eggs. When he saw what I had cooked, he laughed and said, “Yeah sure, I’m just going to fry a couple of eggs…that’s a meal right there!”

Broken Omelette…because I am just not great at making perfect ones!
