Triple Decker Sandwich

Hi all! Sorry for the lack of communication and posts. Things have been hectic and moving extremely fast these days. I am moving to China in a month. So as you can imagine, there was a lot of packing to do and most of our belongings are now stored at my in-laws in Galicia. The road trip there took us 8hrs each way and I think both me & my cat are “van lagged”! I am also left with the very basics to cook with like my old worn out and broken wok along with an old pot! 

That aside, meals have to be super simple for the next 4 weeks so I made a sandwich for my dinner last night and I have to say, it satisfied my hankering.



All you need is:

  • Tuna
  • Mayonnaise
  • Pickles
  • Salad leaves
  • Black pepper
  • 3 slices of bread (toasted)

Just toast your bread, spread some mayonnaise on the 3 slices of bread and assemble your sandwich! A simple, filling & tasty meal!

Roasted Chicken Thighs

It has been a while since my last post and it’s not because I have not been cooking, I have, but mostly nothing exciting worth blogging about. At one point I even revisted my blog for inspiration and made my I Think I’ll Call it a Biryani again. Have you ever felt like you have no idea whatsoever to cook?

So last night, inspiration finally struck me to make a simple, yet delicious dinner for us…Roasted Chicken Thighs topped with a cream of garlic and oyster mushroom sauce!

Ingredients
• Chicken thighs
• Oyster mushrooms (chopped)
• Garlic (diced)
• Double cream
• Dried parsley
• Garlic granules
• Cracked black pepper
• Salt to taste
• Olive oil

Method
1. In a large bowl, marinade the chicken thighs in lots of cracked black pepper, salt, dried parsley, a sprinkle of garlic granules and olive oil to bind it. Leave this to marinade for a few hours or overnight.
2. Pre heat oven to 180 degrees C. Place the chicken thighs on a baking sheet and roast till golden and crispy.
3. When the chicken is almost ready, start preparing the cream sauce.
4. In a skillet, add a little olive oil and throw in the garlic & mushrooms. Sauté till the mushrooms are soft.
5. Add the dried parsley, cracked black pepper and a little salt to taste before adding the cream into the skillet. Lower the heat and let it simmer slightly for 2 mins.
6. Remove the chicken from the oven, place on a dish and top it with the cream sauce.

Garnish with dried parsley and serve with roast potatoes…

I just roasted 1 potato with its skin on, which I cut into quarters, seasoned it with salt, pepper and coated it with a little olive oil and placed it in the oven together with the chicken. Easy.

The meal was a hit with my husband and I’m sure I’ll be making it again when ideas and inspirations run dry! The good thing is, you don’t need many ingredients either! Bonus!😊

Broken Omelette

I must admit and I am not proud of it but when I am on my own, I tend to get lazy when it comes to cooking for myself and it’s usually during lunch when I find myself snacking on fruits, nuts and even tofu (basically anything convenient I can find). For example yesterday, by 2pm I started “hunting” for food and ended up having a banana, a yellow plum and leftover brown rice!

So when my husband came home from work with a sore stomach last night, I knew he would not be having any dinner. After much deliberation, I ended up making myself a lazy dinner of tuna, roasted peppers & mushroom omelette….well…a broken one!

What you will need…
– 2 eggs
– roasted Italian sweet peppers (I made this yesterday by placing peppers, a whole garlic, mixed herbs & olive oil and roasting till the peppers are soft)
– tuna
– oyster mushrooms

Method
1. In a hot skillet, add the tuna, mushrooms and a little of the oil from the roasted peppers. Sauté till the mushrooms are cooked.
2. Add as much of the home-made roasted peppers as you like, season with cracked black pepper, stir them around and add the beaten eggs.
3. Spread the eggs out evenly and let it cook before flipping over. Mine broke during the flipping process!

Serve this with a side salad.

Before I made this, I said to my husband that I was just going to fry a couple of eggs. When he saw what I had cooked, he laughed and said, “Yeah sure, I’m just going to fry a couple of eggs…that’s a meal right there!”

Broken Omelette…because I am just not great at making perfect ones!
