I love having colourful salads when I have my lunches at home. I often find that salads and light meals help you beat that 3pm slump.

So, here are a few more photos of quick lunches you can prepare without any fuss.

A Rainbow On My Plate

I have been quite picky with what I want to eat lately…well, not exactly picky but more of a loss of appetite during the day and I’ve also been too lazy to cook anything that takes too much of my time.

So for lunch yesterday, I plated up… A rainbow!

Smoked Salmon on toast, topped with raw spinach, baby romaine lettuce, cherry tomatoes, capers, sweetcorn, red onions and drizzled with extra virgin olive oil & lemon.

Season with a little sea salt & cracked black pepper and there you have it…a beautiful rainbow of food prepared in less than 10 minutes!!!

Simple Salad Dressing

I don’t know about you but I’ve never been a fan of the salad dressings you can buy in supermarkets…or any dressings for that matter. I tend to like my salads with just a drizzle of extra virgin olive oil & lemon or lime to keep it fresh and simple or this one I make to have with salads or pasta salads.

What you will need…
• Fresh lemon juice
• Honey
• Extra virgin olive oil
• a little salt & cracked black pepper to taste

Method
1. Mix everything in a jar and shake away or whisk it all up in a bowl. Make it according to your taste. That simple!

Drizzle on any salad of your choice…

Lemon & Herbs Chicken Salad

The weather here has been quite humid and warm-ish for the last few days and sometimes it can make you feel quite…mmm..how can I word it…”bleh” if you know what I mean.

So for dinner last night, I really felt like having something light and fresh, also I knew my husband would appreciate it too. I love bread, so I made a batch of Easy Cheesy Garlic Bread to go with this salad.

Ingredients
for the chicken salad…
• Chicken breast (whole)
• Dried mixed herbs
• Dried parsley
• Lots of cracked black pepper
• Juice of half a lemon
• Extra virgin olive oil
• Course sea salt to taste
• Chickpeas
• Baby plum tomatoes
• Mixed leaf salad
• Cucumber

Method
1. In a container, combine the chicken breast with the herbs, lemon juice, pepper, salt and olive oil. Leave to marinade for half an hour.
2. Preheat oven to 180 degrees C and cook the chicken till golden. Leave to cool a little before cutting into pieces.
3. In a big bowl, combine the mixed leaves, tomatoes, cucumber, chickpeas, salt & pepper, a drizzle of olive oil and a little lemon juice.
4. Once done, add the chopped chicken to the salad and mix thoroughly.

for the garlic bread…
• Baguette or any bread you desire
• Garlic granules
• Mixed herbs
• Butter
• Cracked black pepper
• Cheddar cheese (grated)
(I don’t think we need the method for this…😊). Just place in the oven till the cheese melts.

Serve the salad along with the warm cheesy bread…

Lunch for One

Today I decided that I was not going to have a lazy “not really a lunch” lunch as I always do when I am alone. So I made this easy, quick and healthy lunch of Norwegian Smoked Salmon on toast served with a tasty mixed salad.

You will need…
• 100g Norwegian Smoked Salmon
• Fresh mixed salad
• 1 Tomato (quartered then halved)
• Kalamata olives
• White cheese (this is a very soft, light & creamy, very mild cheese used for salads)
• Lemon juice
• Extra virgin olive oil
• Wholemeal bread or any other bread of your choice (toasted)

Method
No method really….in a bowl, combine the mixed salad, olives, tomatoes and the white cheese. Drizzle with a little olive oil, lemon juice and salt & cracked black peper to taste.

After that, the rest is up to you how you serve the salmon on toast!

Lunch for one is served…along with the remaining salad.

Fast food? You can’t get food faster than this one. Enjoy! 😋

Broken Omelette

I must admit and I am not proud of it but when I am on my own, I tend to get lazy when it comes to cooking for myself and it’s usually during lunch when I find myself snacking on fruits, nuts and even tofu (basically anything convenient I can find). For example yesterday, by 2pm I started “hunting” for food and ended up having a banana, a yellow plum and leftover brown rice!

So when my husband came home from work with a sore stomach last night, I knew he would not be having any dinner. After much deliberation, I ended up making myself a lazy dinner of tuna, roasted peppers & mushroom omelette….well…a broken one!

What you will need…
– 2 eggs
– roasted Italian sweet peppers (I made this yesterday by placing peppers, a whole garlic, mixed herbs & olive oil and roasting till the peppers are soft)
– tuna
– oyster mushrooms

Method
1. In a hot skillet, add the tuna, mushrooms and a little of the oil from the roasted peppers. Sauté till the mushrooms are cooked.
2. Add as much of the home-made roasted peppers as you like, season with cracked black pepper, stir them around and add the beaten eggs.
3. Spread the eggs out evenly and let it cook before flipping over. Mine broke during the flipping process!

Serve this with a side salad.

Before I made this, I said to my husband that I was just going to fry a couple of eggs. When he saw what I had cooked, he laughed and said, “Yeah sure, I’m just going to fry a couple of eggs…that’s a meal right there!”

Broken Omelette…because I am just not great at making perfect ones!

Spicy Peanut Crusted Chicken

Hope you had a lovely relaxing weekend! I don’t normally cook on Saturdays…(if I can help it😉) as it’s always nice to eat out and discover different food places for a change. So, apart from the lazy dish I made for our Sunday lunch, I prepared this simple spicy dish on Friday night and served it with a warm mixed crunchy vegetable & egg noodle salad.

Ingredients
for the chicken…
– 2 pieces of chicken breast
– 5 cloves of garlic (minced)
– 2 chunky slices of ginger (minced)
– 1 teaspoon chopped chillis (reduce or increase the amount according to your taste)
– Chopped peanuts
– Sesame oil
– Fish sauce
Method
1. In a large bowl or container, combine all the above ingredients (except the peanuts) to the chicken breasts and marinade for 4 hours or overnight.

2. Heat oven to 180 degrees celcius and just before placing in the oven, coat the chicken breasts with the chopped peanuts.

3. Leave this to roast for 45 mins or until chicken is thoroughly cooked and the peanuts are golden brown.
In the meantime, prep the vegetables and boil the egg noodles for the warm salad. Here’s what I used…
– Zucchini
– Sweet red and green Italian peppers
– Oyster mushrooms
– Sugar snap peas
– Onions
(Cut all the above vegetables into long strips)
– Garlic (minced)
– Ready fried tofu (because I had leftovers…so this is optional 😊)

REMEMBER TO CHECK ON THE CHICKEN
4. In a hot wok, sauté the onions and garlic in a tablespoon of sunflower oil and a tablespoon of sesame oil for 5 minutes.
5. Add into the wok, the oyster mushrooms and tofu. Sauté for another 2 minutes before adding the egg noodles.
6. Add a few dashes of the fish sauce and make sure the noodles are evenly covered with the mixture.
7. Add the remaining vegetables, mix them around and take it off the heat.
8. Take the chicken out of the oven, leave it to rest for 5 minutes before slicing them.

9. Place the noodle salad on a big serving plate and arrange the sliced chicken on the side. Garnish with lots of cilantro.

This is a great dish for gatherings or to have on those cosy nights in.

Spicy, simple & tasty!

Between my husband and I, we got 4 meals out of it!! Plenty leftovers for my “I don’t cook on Saturdays” theory! I hope you will enjoy it too! 😊

Moroccan Spiced Chicken

It’s Sunday and we decided to have a lazy day at home. I made a VERY lazy lunch of Moroccan spiced chicken with roast peppers.

Ingredients
– 2 pieces of chicken breast
– 1 large onion (cut into quarters)
– 2 Italian sweet peppers (red & green, cut into 3)
– Moroccan mixed spice
– Dried parsley & garlic mix
– Cilantro
– Extra virgin olive oil
– Salt & coarse ground pepper to taste
Method
1. Heat oven to 180 degrees celcius.
2. In a container, combine chicken, olive oil, Moroccan spice, parsley & garlic mix, cilantro, salt and pepper to taste. Leave to marinade for 15 minutes.

3. Place the chicken breasts in the heated oven.

4. Prep the peppers, onions and combine with a little olive oil along with salt & pepper.

5. Once the chicken has been roasting for 20mins, take them out of the oven and place the peppers and onions on the side. Return this to the oven.

6. Leave to cook for another 20 mins.

I served it with a side of crusty bread, fresh mixed salad with chickpeas, tomatoes and cilantro! Simple, healthy & tasty!
