Triple Decker Sandwich

Hi all! Sorry for the lack of communication and posts. Things have been hectic and moving extremely fast these days. I am moving to China in a month. So as you can imagine, there was a lot of packing to do and most of our belongings are now stored at my in-laws in Galicia. The road trip there took us 8hrs each way and I think both me & my cat are “van lagged”! I am also left with the very basics to cook with like my old worn out and broken wok along with an old pot! 

That aside, meals have to be super simple for the next 4 weeks so I made a sandwich for my dinner last night and I have to say, it satisfied my hankering.



All you need is:

  • Tuna
  • Mayonnaise
  • Pickles
  • Salad leaves
  • Black pepper
  • 3 slices of bread (toasted)

Just toast your bread, spread some mayonnaise on the 3 slices of bread and assemble your sandwich! A simple, filling & tasty meal!

I love having colourful salads when I have my lunches at home. I often find that salads and light meals help you beat that 3pm slump.

So, here are a few more photos of quick lunches you can prepare without any fuss.

Crispy Oven Baked Chicken

The craving for comfort food has hit me hard. I’m struggling to adjust to the cold this time and even made a hot water bottle to warm my toes yesterday! I can’t believe this, I used to live in Scotland. Don’t get me wrong, I loved it there and Scotland will always, always have a very special place in my heart as it was where I spent most of my early 20’s right up to my early 30’s, it was where I met my husband and it was also where we got married. But oh my goodness how did I survive the winters for almost 13 years? I don’t think I craved comfort food all the time there.

Anyway, yet again to entertain my cravings, I made a very simple Crispy Chicken dish…

Ingredients
• Chicken thighs or drumsticks
• Milk
• Flour
• Dried parsley
• Paprika
• Oregano
• Cracked black peppercorns
• Salt to tast

Method
1. Soak the chicken thighs in milk between 20 to 30 mins.
2. Combine flour, garlic granules, paprika, dried parsley, oregano, cracked black peppercorns & salt in a large bowl.
3. Pre heat oven to 180 degrees C.
4. Heat a little oil in a pan.
5. Coat the chicken thighs thoroughly in the seasoned flour mixture and sear both sides in the hot pan before transferring them onto a baking tray and into the oven.
6. Remove the chicken thighs from the oven and let them rest for a few mins.

I served it with garlic & parsley mashed potatoes along with a very simple salad. Craving satisfied!😊

Honey Cornflakes Cookies

As you might all know, it was Eid yesterday and it’s a celebration marking the end of a month of fasting. My husband and I had a very quiet day enjoying a few traditional Malay delights that I prepared the day before that.

One of the sweet delights I prepared were these litte cups of sweetness. They are called Cornflakes Madu, basically Honey Cornflakes and one of many popular sweets that is served in every Malay home during Eid…

Ingredients
• 5 cups Cornflakes
• 1/4 cup honey
• 1/4 cup butter
• 1/2 tbsp sugar (adjust according to taste)

Method
1. Place the cornflakes in a big bowl and crush them with your hands a little so it’s easier to spoon them in the mini paper casing.
2. Melt the butter, sugar & honey in a saucepan for 3 mins and pour the mixture into the cornflakes.
3. Combine well and make sure the cornflakes are coated thoroughly with the sweet mixture.
4. Heat oven to 150 degrees C.
5. Arrange mini paper casings on a baking sheet and spoon in the cornflakes into each one making sure you gently press them down a little so they stick well together once baked.

6. Bake for 20 to 25 mins and cool on a wire rack.

Store in an air tight container and you can just devour them anytime you want!

As you can see, they are dangerously easy to make!😉

Posh Bread Pudding

I thought it was time I got back into posting something seeing as I’ve been missing in action for a couple of weeks. To be honest, I have not been cooking anything worth posting and what with all the sad news around the world, I have not been very motivated to blog.

Also with Eid coming up soon and seeing as this year it will just be my husband and I celebrating, it has made me just a little sad that we are not with our families in Singapore and Malaysia or our close friends in Manchester. But like most things, there is always a silver lining….one of my good friends from Edinburgh has decided to come visit us a couple of days after Eid! So we’ll have a mini celebration then! Also, this will be my 100th post!! Yaay! 😊

Anyway, lets get to the recipe of this Posh Bread Pudding I made a couple of weeks ago. I say it’s posh because I used mini croissants instead of normal bread and I used evaporated milk to make it that extra rich and creamy!

Ingredients
• 5 to 6 mini croissants (roughly cut)
• 2 eggs
• 100ml evaporated milk
• 100ml milk
• 50gms caster sugar (or according to taste)
• a handful of sultanas
• 1tsp vanilla essence

Method
1. Pre heat oven to 150 degrees C.
2. Place the mini croissants in an ovenproof dish and set aside.
3. In a bowl, beat the milk, eggs, sugar and vanilla essence before pouring over the mini croissants. Make sure the croissants are completely submerged in the mixture by gently pressing them down.
4. Add the sultanas and bake for 20 to 25 mins or until risen. It will drop once you remove it from the oven.

Serve warm with a scoop…or two..or three of vanilla ice cream…

This is one of the easiest sweets to make and you can create it any way you want!
