Merienda means a snack you have between lunch and dinner…usually a sandwich or something sweet. So yesterday I decided to make Churros con chocolate for our merienda. I found this recipe online a few years ago and it is just so yummy!
Ingredients
• 125g plain flour
• 125g self raising flour
• a pinch of salt
• 2 tbsp good olive oil
• 450ml boiling water
• Sunflower oil for frying
Method
1. Sift the plain flour, self raising flour and salt in a heatproof bowl. Create a well in the centre.
2. In a measuring cup, add the olive oil to the boiling water and stir.
3. Pour into the flour and mix rapidly with a fork. Once combined, let it rest for 10 mins.
4. In a skillet, heat sunflower oil. Place the mixture in a piping bag and pipe away into the oil. Make sure it’s not too hot as you want it to cook through. Also, don’t place too many at once or they will stick together.
5. Once golden, remove them from the skillet and drain on a kitchen towel. Sprinkle with a little sugar (I used brown sugar instead of caster sugar).
For the chocolate, I used Valor thick chocolate you can find here but you can also melt some dark chocolate in a saucepan.
Churros are common to have for breakfast here but I love them at anytime of the day.
You may think I’m mad to make my own Churros when I live in the Motherland of Churros! But sometimes there is nothing more satisfying than making something from scratch and enjoying them!
Needless to say, dinner was skipped after having them!
Have a great start to the week!! ☺️
